2.What inspired the creation of LCHF Foods?
Our founder's journey with chronic ill health inspired the creation of LCHF Foods. Discovering the transformative effects of a keto / low carb lifestyle she was motivated to create convenient, delicious, and health-promoting low-carb foods.
3.What is unique about Happy Jo’s ice cream?
Happy Jo’s ice cream is the lowest-carb luxury ice cream available in the UK. It is healthy, low-carb, full-fat ice cream with absolutely no added sugar.
4.Why does Happy Jo's ice cream melt more slowly than traditional ice cream?
Sugar causes ice cream to melt quicker, and since our products do not contain added sugar, they do not melt as quickly as traditional ice cream. For maximum deliciousness and the creamiest possible texture, we recommend letting your tub sit out for 20 minutes after taking out of the freezer.
5.What are net carbs and how are they calculated?
Net carbs are essentially the total amount of digestible carbs. To calculate net carbs subtract polyols from the total carbs.
- Total Carbs - Polyols = Net Carbs
6. What are soluble corn fibre and polydextrose and why do you use them in your ice cream?
Polydextrose is a non-digestible dietary fibre which we use in producing our ice cream to improve the texture and consistency. As a substitute we sometimes use soluble corn fibre for the same reasons. Both ingredients are also typically used as sugar replacements in sugar free products to lower the net carb load.
Don't let the 'dextrose' in polydextrose confuse you. Polydextrose is a non digestible dietary fibre used widely in the food industry.
We do switch between polydextrose and soluble corn fibre depending on availability from our suppliers.
Soluble corn fibre is about 25 on the glycemic index (GI) while the GI of polydextrose is lower, ranging between 4 and 7. For comparison, glucose has a GI of 100.
Each 12oz / 275g tub of our ice cream contains about 12g of either soluble corn fibre or polydextrose while our 6oz / 137.5g tubs contain about 6g.

12.How is the ice cream packaged for delivery?

13.How should I handle dry ice?
Handle dry ice with gloves to protect your hands and prevent cold burns. Be aware that dry ice should not be consumed under any circumstance. Open your package as soon as you receive it and put the ice cream into your freezer.
Dispose of any remaining dry ice in a ventilated bin or other ventilated receptacle.
14.Can you deliver to PO Boxes?
We cannot deliver to PO Boxes due to the highly perishable nature of ice cream. To guarantee delivery, we must have the complete and correct address.
